1/2 pound vidalia onions, minced         
1 dash rosemary   
6 tbsp sugar     
1 cup champagne     
1 tbsp Rose's Sweetened Lime juice         
1 egg white 

Combine onion, rosemary, sugar and champagne in a heavy saucepan
Simmer over medium heat for 5 minutes.
Remove from heat and puree in food processor.
Let cool.
Add lime juice.
In a separate bowl, whisk egg white until foamy.
Fold egg white into onion mixture .
Place in ice cream machine according to manufacturer's directions.
